EASY BREAKFASTS THAT ARE ACTUALLY WORTH IT.

If you are anything like me- breakfast is a quick grab and go process. Unless it's a slow morning where I have the time to make an entire meal. That said our family isn't a huge breakfast family. We each handle our own (or I end up cooking for everyone) but it's super simple. 
I believe breakfast should be two things: genuinely delicious and quietly working for you.Not sad diet food. Not complicated recipes that require a culinary degree.Just real, beautiful, nourishing meals that support your hormones, fuel your day, and honestly, just make you feel good.Every recipe on Girl Said Glow is designed with women's health in mind. I'm talking blood sugar balance, hormone support, gut health, and the kind of sustained energy that gets you through your morning without reaching for a third coffee (well you can still do that- I get it).And yes, it all has to taste amazing. That part is non-negotiable. Eat well. Here are some of my favorite recipes that are so quick you'll be done before you can talk yourself out of it.

BERRY YOGURT BOWL

With granola, mixed berries, honey, seeds)
Calories: ~380 | Protein: ~20g | Carbs: ~45g

Okay this one is stupid easy and honestly one of my favorite things to eat in the morning. Greek yogurt, whatever berries you have, a little honey on top... & done. But here's the thing, it's not just easy, it's actually doing something for you. The berries help your body process estrogen, the yogurt is keeping your gut happy, and the whole thing keeps you full without that weird sluggish, heavy feeling. I make this almost every week and it never gets old.

Ingredients:
Plain Greek Yogurt or Ratio Protein Yogurt (I like to switch it up between Greek and Strawberry)
Granola (Homemade or store bought, up to you) - I'm Including my recipe for Homemade Vanilla Granola below
Fresh strawberries
Fresh Raspberries
Fresh Blueberries
A drizzle of honey 
Measure with your heart with any of these ingredients-  you can't go wrong.

I also add a ton of seeds to top mine off, including: flax seeds, sunflower seeds, pumpkin seeds & more chia seeds

Homemade Vanilla Granola

Calories: ~280 | Protein: ~6g | Carbs: ~32g

I know I said "easy" but if you pre-make this in the beginning of the week it's easy to throw into the breakfast routine. - so easy would be purchasing a healthy pre-made granola from any grocery store or online. 🙂 My fave is Cascadian Hills - original or vanilla.This is the only granola recipe you'll ever need.Golden, crunchy, and lightly sweetened, this granola is the perfect companion to your yogurt bowl or a handful on its own. Made with whole oats, healthy fats, and real vanilla, it's the kind of thing you'll batch make on Sundays and feel really good about all week.

Ingredients:
3 cups old-fashioned rolled oats
1 cup chopped pecans or almonds (we can't use here bc my son is allergic but trust me- add them - if you are like us sub extra oats)
½ cup sliced almonds
½ cup unsweetened coconut flakes
¼ cup pumpkin seeds
2 tbsp chia seeds (optional)
1 tsp cinnamon
½ tsp sea salt
⅓ cup maple syrup
¼ cup melted coconut oil (or melted butter)
1 tsp vanilla extract
After baking:
½ cup dried cranberries (optional)
Mini chocolate chips (once completely cool, if you’re feeling fun)

Instructions
Preheat oven to 325°F.
Line a baking sheet with parchment paper.
Mix together:oats nuts coconut pumpkin seeds chia cinnamon salt
In another bowl whisk: maple syrup melted coconut oil vanilla Pour the wet ingredients over the dry and stir until everything is evenly coated.
Spread into one even layer on the baking sheet. 
Don’t overcrowd it
Press it down lightly with a spatula if you want chunky clusters.
Bake for 25 to 30 minutes, stirring only once halfway through.
Let it cool completely before touching it.  

Chia Pudding 3 ways

Mango | Chocolate | Vanilla 

Vanilla chia pudding

Calories: ~180 | Protein: ~6g | Carbs: ~22g | Fat: ~8g | Fiber: ~10g


INGREDIENTS:
(1 serving)
Ingredients
3 tablespoons chia seeds
1 cup unsweetened almond milk or oat milk
1 teaspoons vanilla extract
1 tablespoons maple syrup or honey
fresh blueberries or toppings of choice
1 mint leave

DIRECTIONS:
1. Mix the pudding: 
Combine 3 tablespoons of chia seeds
1 cup unsweetened coconut milk or oat milk
1 teaspoon vanilla extract 
1 tablespoon maple syrup or honey in a jar or bowl. 
Stir well.

2. Stir again: Let sit for 10 minutesthen stir again to break up any clumps.3. Refrigerate overnight: Cover and refrigerate overnight or at least 240 minutes

 Top and serve: 
In the morning, stir the pudding. If too thick, add a splash of milk. Top with fresh blueberries, for topping & 1 fresh mint leaf.

Chocolate chia pudding

Calories: ~195 | Protein: ~7g | Carbs: ~24g |

Chocolate for breakfast. Justified. Encouraged.Rich, creamy, and loaded with magnesium from raw cacao — this pudding is basically PMS relief in a jar. It tastes indulgent, it photographs beautifully, and it supports your progesterone levels while you sleep. Win, win, win.

INGREDIENTS:
3 tablespoons chia seeds
1 cup unsweetened cocnut milk or oat milk
2 tablespoons raw cacao powder or unsweetened cocoa powder (I also like to add cacao bits for a little crunch)
1 tablespoon maple syrup or honey 
1/2 teaspoons vanilla extract
fresh raspberries, strawberries, or cherries

DIRECTIONS:
1.Dissolve the Cacao : Whisk 2 tablespoons raw cacao powder or unsweetened cocoa powder into
1 cup unsweetened almond milk or oat milk until fully dissolved with no lumps.
2. Mix the pudding: Add 3 tablespoons chia seeds1 tablespoon maple syrup or honey & 1/2 teaspoons vanilla extract. 
Stir well.

. Stir again: Let sit for 10 minutesstir again to prevent clumping.
4. Refrigerate overnight: Cover and refrigerate overnight or at least 240 minutes 
5. Top and serve: In the morning, stir well.
Top with fresh raspberries, pomegranate seeds or strawberries I like to add an additional 1 teaspoons cacao nibs to the top.

Mango Turmeric Chia Pudding
(my fave)

Higher fat from full fat coconut milk

Bright, tropical mango chia pudding with a turmeric twist... anti-inflammatory, hormone-supportive, and absolutely stunning in a jar. The color alone will feels good in the morning.This one honestly surprised me. I made it expecting it to just be fine and ended up eating it three days in a row. The mango and coconut milk together make it taste way more indulgent than it is, and the turmeric gives it this beautiful golden color that looks incredible in a jar. It's also genuinely good for you - turmeric is anti-inflammatory and really supportive for hormone balance, which is the whole point. Make it the night before and breakfast is literally already done.

INGREDIENTS:
3 tablespoons chia seeds
1 cup coconut milk (canned, full fat)
1 tablespoons maple syrup or honey
1/3 teaspoons turmeric powder
1/3 teaspoons vanilla extract
1/5 cups fresh or frozen mango, diced
1 tablespoon lime, juiced
2 tablespoons toasted coconut flakes, for topping

DIRECTIONS:
1. Mix the pudding: Combine 3 tablespoons chia seeds
1 cup coconut milk (canned, full fat)
1 tablespoon maple syrup or honey
1/3 teaspoons turmeric powder
1/3 teaspoons vanilla extract in a jar.Stir well.
2. Stir again:
Let sit for 10 minutes then stir again to prevent clumping.

Protein scrambled eggs and sasuage

420 calories | 38g protein | 4g carbs | 28g fat | 2g fiber


This is genuinely one of my favorite things to eat right now. The cottage cheese goes straight into the eggs when you whisk them together and completely disappears — what you get is the creamiest, fluffiest scrambled eggs you've ever had. I fold the spinach right in while everything cooks so it all comes together in one pan, and the sausage gets seared until it's caramelized and slightly crispy on the edges. Red pepper flakes on top, green onions, done. It's a lot of protein, it's actually filling, and it takes maybe ten minutes. I make this on repeat.

INGREDIENTS:
3 large eggsSpoonful of full fat cottage cheese
2 tbsp freshly grated Parmesan (or as much as you want)
Splash of milk or half and half
Your favorite seasoning blend - I love Kinder's "The Blend"
1 tsp butter or olive oil
2 large handfuls fresh spinach
1 garlic clove, minced
2 chicken or turkey sausage links, sliced into rounds
Red pepper flakes, green onions, flaky salt & pepper

 DIRECTIONS:
1. Heat a pan over medium-high heat.
2. Add sausage slices and sear until deeply caramelized on both sides, about 2-3 minutes per side.
3. Set aside.
In the same pan, reduce heat to medium.
4. Add a little oil if needed, then add minced garlic and cook 30 seconds until fragrant.
5. Add spinach and toss until just wilted, about 1 minute.
6. Season with salt and pepper and push to the side of the pan.In a bowl,
whisk together eggs, cottage cheese, Parmesan, milk or half and half, and your seasoning blend until fully combined.

7. Reduce heat to medium-low. Add butter or olive oil to the pan. Pour the egg mixture over and around the spinach. Gently fold everything together from the outside in, low and slow, until the eggs are just set but still creamy.
Pull off the heat slightly underdone - they'll finish in the pan.

Transfer to a bowl. Arrange the sausage alongside. Top with red pepper flakes, green onions, and flaky salt. The spinach folds right into the eggs - you won't even notice it's in there until you realize how good you feel. Low and slow is everything here. Don't rush it.



And that's it. A few breakfasts that actually do something for you - no complicated techniques, no ingredients you've never heard of, nothing that requires you to be a morning person. Just real food that tastes good and quietly works in your favor.Start with whichever one feels easiest this week. Make the chia pudding tonight. Throw the granola together on Sunday. Scramble those eggs tomorrow morning and see if you don't feel different by 10am.Your mornings don't have to be perfect. They just have to be worth it.
